Because, waffles are amazing and cornbread is darn delicious. So, what better than to combine the two into a delicious, healthy protein-rich waffle. Made using a combination of ground oat and spelt flour, this waffle is everything BUT boring. Spelt flour isn't gluten free, but it's wheat-free and high in protein. Free of processed sugars by using honey with fresh blueberries, and it's far from dense like most healthy waffles (one might say). No need for the butter, drizzle with organic maple syrup and a little greek yogurt for extra protein if you're feeling mighty hungry. Make it gluten-free by using all oat flour, or make it vegan by using a flax egg instead of a regular egg. See, everybody can be happy. Toss the processed buttermilk waffle mix along with the excuses. |
Ingredients:
1/4 C Oat flour
1/4 C Spelt flour
1/4 C Corn Meal, light-medium ground
1 tsp baking powder
1/2 tsp salt
1 TB organic coconut oil
1 TB organic honey
1 egg
1/3 C Almond Milk
1/3 C Blueberries
Directions:
1/4 C Oat flour

Directions:
- Mix all the dry ingredients in a medium bowl.
- In a separate bowl, combine the egg, coconut oil, honey and almond milk.
- Whisk until mixed evenly, then add the wet to the dry ingredients.
- Toss the blueberries and mix lightly.
