It's Easter Sunday, and I have the whole morning to myself. So many brunch ideas, but of course I HAVE to make a new waffle recipe for myself. There's nothing wrong with a little self love, am I right? Say hello to the newest, best oat waffle of all oat waffles. It's gluten-free. It's lemony. And it's served best with a Prosecco mimosa & mango slice--said thy self. But really, it's packed with blueberries, almond flavoring, raw almonds, chia seeds, greek yogurt, maple syrup, cinnamon, protein, vitamins, calcium... Basically, this waffle is EVERYTHING amazing. Wish I had room for more, but the mimosa is a must. |
Ingredients:
1/2 cup oats, ground into flour
1/2 tsp baking powder
1/2 tsp cinnamon
dash salt
1 egg
1/4 cup almond milk
2 TB nonfat plain greek yogurt
2 tsp fresh lemon juice
1/2 tsp almond extract
handful of blueberries
Directions:
Yogurt Whip:
1/4 cup Nonfat, plain greek yogurt
dash of maple syrup
dash of cinnamon
Mix it & spread!
Blueberry compote:
handful of blueberries
1 TB water
1 TB raw sliced almonds
Heat a small sauce pan over low heat. Toss in your blueberries and add water or coconut oil to avoid sticking. Heat for 2-3 minutes. Toss in your sliced almonds and serve warm (:

- Using a vitamix or blender, ground the oats into flour.
- Place the oat flour into a medium mixing bowl. Add in all the dry ingredients and mix well.
- In a separate bowl, whisk together the egg, almond milk, greek yogurt, lemon juice and almond extract.
- Combine wet and dry ingredients, whisk together well. Add in a handful of blueberries and mix.
- Pour batter into waffle maker and let cook until crispy (:
- Serve with maple syrup, greek yogurt, fruit, nuts, or chia seeds.
