If you haven't learned from our instagram that I absolutely LOVE waffles, then you should know that I, well, love making waffles. You've probably also learned that I haven't posted the recipes for any of the waffles that I've made in the past. Let's just say I had a habit of making up a recipe and lacking the "write it down this time" part. Forgive me, I'm getting better--so here you go, folks! This is a new, healthy waffle recipe that incorporates a whole lotta' protein. Topped with a greek yogurt whipped cream and fresh blackberries, it's definitely one to run a few extra miles for. Ingredients: serves 1 (3 waffle corners)
3 TB whole wheat flour
1 TB rolled oats
2 tsp flax meal
1/2 tsp baking powder
1 tsp coconut sugar
1/2 tsp cinn
1 tsp chia seeds
1/3 Cup almond milk
1 tsp egg white
1 TB greek yogurt
dash vanilla extract

Directions:
- Mix the dry ingredients in a medium-size bowl using a whisk.
- Once evenly combined, add in the egg whites, greek yogurt, almond milk, and vanilla extract.
- Mix well, spray waffle oven with cooking spray, poor batter into 3 of the 4 waffle sections. Cook until lightly brown, add your toppings and enjoy!
