Holy crepe! Okay- so I wasn't even completely sure which category to list this recipe under. Are crepes a breakfast food? Dinner? Dessert? I vote all of the above. But for the sake of organizational blog posting, I chose to list it under breakfast. I do feel, however, that I should make it known that I will most definitely be using the base of this recipe to create a plethora of meals. Oh, yes.
Making crepes has always intimidated me. If you've been in a store that sells cookware, which I frequent quite often, you know that they sell those fancy crepe tools. Pans, spreaders, spatulas, etc. I am here to tell you that making crepes is no harder than whipping up a batch of pancakes! That's basically what they are anyway, right? If you have a large frying pan and a spoon, you are more than capable of making your own crepes!
What you choose to stuff inside your crepes is completely up to you. I started with plain non-fat greek yogurt, strawberries, banana slices and pure maple syrup. (A classic and absolutely delicious rookie move.)

Ingredients:
1/2 cup gluten-free old fashioned rolled oats
1/2 cup unsweetened vanilla almond milk
2 Tbsp About Time Vanilla Protein Powder
5 Tbsp liquid egg whites
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp nutmeg
Directions:
1/2 cup gluten-free old fashioned rolled oats
1/2 cup unsweetened vanilla almond milk
2 Tbsp About Time Vanilla Protein Powder
5 Tbsp liquid egg whites
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp nutmeg
Directions:
- Using a blender or food processor, create flour by blending oats.
- In a large bowl, combine all ingredients. *Your batter should be thin and spreadable.
- Heat a frying pan or griddle over medium heat and coat with oil or non-stick cooking spray.
- Pour batter into the center of a pan and using the back of a spoon, quickly spread into a large circle.
- Cook for about 1-2 minutes on each side.
- Repeat with the remaining batter.
- Stuff and enjoy!
