So we love pancakes, but you already knew that. If you follow our amazing instagram account (if you don't, check it our on our contact page!) then you've seen our many delicious, pancake-spirational mornings. They're quick, easy, healthy & can be topped with everything and anything. Let's face it, we'll never get sick of 'em. Inspired by Running with Spoons (an amazing food blog & favorite of mine) delicious go-to Greek Yogurt Oat Pancakes, I developed these yummy sweet-with-a-dash-of-spinach pancakes. They taste so yummy plus you're getting a bit of greens into your breakfast--why not right? |
Ingredients: makes 6-7 mini pancakes
Spiced Greek Yogurt Whip:
Toppings:
Directions:
- 3/4 cup rolled oats
- ½ tsp. baking powder
- ½ tsp. cinnamon
- ½ medium banana
- 2 egg whites
- ¼ cup plain Greek yogurt
- 2 TB almond milk
- handful of spinach, chopped
Spiced Greek Yogurt Whip:
- ¼ Cup Non-Fat Greek Yogurt
- ¼ tsp nutmeg
- ¼ tsp cinnamon
- dash of pure maple syrup
Toppings:
- extra banana slices (I put them inside the pancakes & yum! )
- strawberries
- blackberries
- raw walnuts
Directions:
- Add all the ingredients into a Vitamix, or blender.
- Blend until combined well. If batter seems too watery, add more oats!
- In a medium pan, pour each one about 3" width and add in the banana slices. Cook for 1-2 minutes and flip. Cook until lightly browned and serve warm.
- Top with yummy fruit & whip---enjoy!
