Autumn is officially here! What better way to start off October than with a pumpkin recipe? Too soon? Well, we break the rules in our kitchen! It's also apple season. Not sure what to do with all those delicious fresh pickings? Make some caramelized apples, these delicious oat pancakes and top them with fresh maple syrup and walnuts. It's going to get cold soon, let's warm up sooner. Plus, it's Sunday. Brunch anyone? |
Ingredients:
1 cup oat flour (ground oats in a blender works perfect!)
1 egg
1 tsp baking powder
1/2 teaspon baking soda
1/2 tsp salt
1/2 tsp honey
3/4 cup almond milk
2 tsp pumpkin spice mix
Caramelized Apples:
1 apple, peeled and diced
1/2 tsp coconut oil
1/2 tsp cinnamon
1/2 TB coconut sugar
2 tsp maple syrup
walnuts
Directions:
1. Heat a medium skillet over low heat, toss in the coconut oil and apple. Toss in the cinnamon and coconut sugar. Mix to coat evenly and turn heat to very low and slightly cover.
2. While the apples are slowly cooking to soften, prepare your pancake mix. Combine your oats, baking soda, baking powder, and salt. Mix then add the egg, almond milk & honey. Combine evenly then toss in the pumpkin spice.
3. Using a large skillet, bring to medium heat. Pour the mix and cook for about 1-2 minutes on each side. When it starts to bubble ,it's ready to be flipped.
4. While the pancakes are cooking, continue to rotate and turn over the apples. This will allow them to cook slowly and be ready by the time your pancakes are finished. Toss in the maple syrup and walnuts with the apples when you are almost done making the pancakes. Coat evenly.
5. Once the apples are soft,you can just bring to low heat and cover until ready!
