Baking for your loved ones may seem scary for some, but I promise you it's easier than you think. Don't worry about whether or not you're going to fail or if they aren't going to like it (because, well, they will!) If anything, skip the flowers and the hideous red teddy bear and show your loved one how much they really mean to you. Homemade baked goods are always an easy win over for me. Happy Valentines Day (: | So tomorrow is Valentine's Day, and we all know that pie is on everyones dessert to-do list. Now, we don't mean boxed pie that Betty Crocker pre-made and kept frozen, we mean a whole-heartedly self baked pie made by YOU. For that special valentine of yours (or if your single like us, for yourself), a delicious home-made pie is the perfect "I Love You" for any given moment. I mean, where's there not an "I love You" in the... "I baked you a homemade pie from scratch and not just one but TWO, this way not just I but us BOTH can have one all to ourselves!" Who wouldn't love that? Really? Oh, and did I mention they'll even feel good after eating it? It's refined-sugar free, gluten free, AND vegan. So it's delicious AND healthy. How perfect? |
Ingredients
Crust:
1 cup + 2 TBSP Rolled Oats, ground into flour
1/2 tsp salt
1 TBSP raw blue agave
1 1/2 tablespoon coconut oil
1 1/2 tablespoon canola oil
3 TBSP cold water
Apple Filling:
3 small gala apples, peeled & cubed
1 tsp cinnamon
pinch nutmeg
1 tablespoon maple syrup
1/4 cup water

- Preheat the oven to 350 degrees.
- Using pan spray, coat both mini pie dishes.
- In a medium bowl, whisk together the oat flour and salt.
- Using your hands, turn in the coconut oil and agave until well combined.
- Turn in the cold water 1 tablespoon at a time until the dough is no longer a sticky texture.
- Wrap in saran wrap and store in the fridge for at least 20 minutes.
Filling:
- Peel and chop the apples into 1/2 inch cubes.
- In a medium sauce pan, add the apples and a dash of water to avoid apples from burning.
- Sauté for about 15-20 minutes. Stirring every 3-4 minutes adding in the cold water when needed to keep the apple mixture a liquid-form.
- Add in the cinnamon, nutmeg and maple syrup. Stir to coat evenly.
- Keep the heat on low and cover. Cook for an additional 5-10 minutes until apples are cooked through & soft. Keep over low heat while preparing the crusts.
Crust:
- Remove crust from fridge, cover the counter in flour and roll out the dough using a rolling pin (about 1/8"-1/4" inch thick). To bake just one mini pie, split the dough in half and store the rest in the fridge! (:
- Divide the dough into two 5" circles (I used the pie dish as a guide, then just add some extra for the sides!) Keep in mind, if you want to add basket weaving, pie crust topper, or fun heart shapes like we did, keep enough dough aside!
- Place the dough into the pie dishes and press gently until the dough is evenly distributed.
- Using a fork, stab a couple fork marks in the bottom of the dish to avoid bubbling during baking.
- Bake in the oven for about 10 minutes.
- Once slightly browned, remove from the oven. Right away, pour in the apple filling into each dish.
- Place your desired crust topper(flat crust, shape or basket weave) and coat with egg white using a basting brush.
- Sprinkle with sugar in the raw, or simple leave it as is!
- Bake in the oven for an additional 15-20 minutes, or until lightly browned & crispy.
- Let cool for 10 minutes.
- Serve with greek yogurt whip or vanilla ice cream. Enjoy!
