When you feel a late night sweet tooth coming on, lets face it...it can be hard to avoid it. So instead of depriving yourself of that happy sweetness, bake these healthy banana "ice cream" sandwiches. These mini, paleo chocolate, blueberry treats are made with only natural ingredients, low in calories, and even have a dash of protein with the added sprinkle of hemp seeds. A healthy way to fill your sweet craving, and a happy gift to give your after-tummy. See, you both win. Who doesn't want that after a long hard days work or rough commute home? I know I do. Makes 6 cookies (3 sandwiches)
Total time: 20 minutes
Ingredients:
3/4 almond flour
1/4 tsp baking soda
dash salt
1 TB honey
1 1/2 tb egg whites
1/4 tsp vanilla
1/2 tb coconut oil
1 tsp cocoa powder
1/4 tsp cinnamon
dash of hemp seeds
1 1/2 frozen bananas
Directions:

Ingredients:
3/4 almond flour
1/4 tsp baking soda
dash salt
1 TB honey
1 1/2 tb egg whites
1/4 tsp vanilla
1/2 tb coconut oil
1 tsp cocoa powder
1/4 tsp cinnamon
dash of hemp seeds
1 1/2 frozen bananas
Directions:
- Preheat the oven to 350 degrees. Prepare a lined baking sheet with parchment paper.
- Mix the almond flour, baking soda, cinnamon and salt in a bowl. I made my almond flour by blending them in a Vitamix. Super easy!
- In a separate bowl, mix the egg whites, honey and vanilla.
- Melt the coconut oil in the microwave for a few seconds, then add it to the egg mixture.
- Lastly, add in the cocoa powder. Mix evenly.
- Using a spoon, scoop out 1 1/2" width of batter spread apart evenly on the baking sheet. Sprinkle with hemp seeds.
- Bake for 6 minutes. Rotate. Bake for additional 4-6 minutes (keep checking on them until they look done). Remove from the oven when they are almost done and let them cool. They will continue to bake as they sit to cool so avoid over-baking as it will make them too dry!
- Meanwhile, prepare the banana ice-cream by adding the frozen bananas to a vitamix or blender and blend until evenly smooth. Avoid over-blending as it will start to melt and become too mushy!
- Spread a scoop of banana ice cream in between two cookies and enjoy (: !
