Tomorrow is Valentine's Day and we are totally using it as an excuse to create new healthy desserts! (and then eat them, of course) Hey- someone's gotta take one for the team and be the taste tester... a position that we are both glad to take on! These brownie bites are gluten-free and absolutely delicious. We used oat flour as well as greek yogurt and flax eggs to create these moist, cake-like brownie bites. They definitely have the option to be vegan by removing the greek yogurt and swapping it with extra coconut oil to keep them moist! Remember to tag us in your photos if you decide to make them for your significant other... or yourself! (Let's face it- you deserve a little extra love this weekend.)
Ingredients:
1/2 cup coconut sugar
1/2 cup brown sugar
1/4 cup coconut oil (melted)
1/4 cup plain nonfat greek yogurt
1 tsp vanilla extract
1/2 cup unsweetened cocoa powder
1 cup gluten-free old fashioned rolled oats (made into oat flour)
1/2 tsp baking soda
1/4 tsp salt
*For a completely vegan recipe, replace yogurt with another 1/4 cup melted coconut oil.
Directions:
*If you'd rather make a tray of brownies and slice them yourself, this recipe will still work! Just be sure to check them frequently, as you may need to adjust the time!

Directions:
- Begin by preheating your oven to 350 degrees and greasing a muffin pan with cooking spray or coconut oil.
- In a small bowl, create your flax eggs by mixing 3 Tbsp flax meal with 9 Tbsp warm water.
- In a large bowl, combine sugars, melted coconut oil, greek yogurt and vanilla.
- Place gluten-free oats in a powerful blender to create oat flour.
- Add all dry ingredients to the sugar and oil mixture, as well as the flax eggs.
- Using a rubber spatula, fold all ingredients together until well combined. Your batter should not be as runny as cake batter, but also not as thick as cookie dough.
- Using a 1/4 measuring cup, scoop batter into prepared muffin tins. Our recipe made 10, but you may also use less in each cup to get a dozen!
- Bake brownie bites approximately 20-25 minutes or until they pass the toothpick test.
- Allow them to cool before removing them from the muffin pan to sprinkle with confectioners sugar!
