Total cook/prep time: 60 minutes
Ingredients:
4 cloves garlic
3-4 TB olive oil
2 carrots
1 yellow onion
2 celery stalks
5 cups vegetable stock
1 sweet potato
1 bunch kale
1 cup dried lentils
4 cups water
1 can tomato paste
1 TB rosemary
1 tsp oregeno
1/4 tsp cayenne pepper
Directions:
1. In a large soup pan, heat the olive oil. Toss in the garlic and onions. Cook for 2-3 minutes.
2. Toss in the carrots and celery, cook for additional 8 minutes. Stir occasionally.
3. Toss in the tomato paste and cook for 2-3 minutes.
4. Add in the vegetable broth and lentils. Cover and bring the heat to med/low and cook for 15 minutes.
5. Add the additional water and stir occasionally. Add in the sweet potato and cook for additional 20 minutes. You can toss in all your spices as well.
6. Lastly, add the kale and cook for 3-4 minutes. Add salt & pepper to your liking (:
