There's nothing like a fresh fillet of salmon baked to perfection smothered in an array of herbs & flavor. This healthy dish is JUST that. The crunchiness of the pistachios mixed with a light, honey parsley flavor is simply divine to the taste buds. Protein packed making this the perfect post-workout dinner. Accompanied by steamed broccoli cauliflower with more lemon, because well, you can never have too much lemon OR veggies. Oh, and did I mention this recipe is super easy to prepare? Ingredients: makes two servings
1 large salmon fillet
1 TB parsley
1 TB chives
1/2 TB honey
1 tsp dijon mustard
salt & pepper
1 1/2 TB pistachios, crushed
1 tsp olive oil
Directions:

Directions:
- Preheat the oven to 400 degrees. Prepare a baking sheet with a sheet of foil.
- Place the salmon fillet on the foil sheet.
- To prepare the pistachio breading, combine all herbs, salt/pepper and crushed pistachios in a small bowl. Combine evenly.
- Combine in a separate dish the honey, dijon mustard and olive oil. Mix evenly.
- Pour the honey mixture on top of the salmon and coat evenly.
- Sprinkle the pistachio breading on top of the salmon until evenly coated.
- Bake in the oven for 10-12 minutes depending on the thickness and size of your salmon. It may take as long as 15 or more if it's a thicker piece. Keep checking on it until it flakes with a fork. Don't overcook it as it will become too dry!
- Serve with veggies and enjoy!
