Let's face it, summer makes it hard for us to want cook. We know. We just want to be at the beach with watermelon and a cold beer, am I right? Well, we forget that we always get hungry after that snack, and you know those food stands by the beach are going to be packed with fried foods and everything BUT healthy options. Then we are so hungry, we give in and get it just that "one" time. Well, that's why I've made this summer chickpea tabbouleh thats easy to pack, keeps you full, and actually tastes delicious and refreshing. Fresh parsley, lemon & lime flavor mixed with some feta for a salty flavor makes it a dish you'll look forward to eating while your friends scarf down that greasy burger. Keep it cool in a beach cooler alongside that watermelon and cold beer, and your good to go. |
