A late-post from my post-Spartan Race morning breakfast! I celebrated with these paleo fritters topped with greek yogurt Tzatziki sauce accompanied by a perfectly poached egg. But let's be honest, make it two eggs. After my grueling fitness-to-the-test race, much protein is needed! These little guys are the perfect salad topper and make a healthy brunch dish for those of you who are sick of waffles (though, really, who is ever sick of waffles?) I promise these are easy to make, and are full of flavor. Don't be shy, a healthy alternative is always the better choice. Go for it. |
Ingredients:
1/2 medium zucchini
1/4 cup black beans
1 1/2 TB Rolled Oats, ground into flour
2 TB egg whites
1/2 TB lemon juice
1/4 tsp pepper
1 tsp chives
1 garlic clove
pinch or 1/4 tsp nutritional yeast
