Something nutty happened in the kitchen the other day, and it has quite a salty, sweet, mouth-watering, gingery crunch. I had been craving homemade granola, granola bars, nuts, crunchiness...so say hello to the everything granola bar. Made with only natural, raw ingredients and is the perfect "everything" snack. It's not baked. It's vegan. High protein and made using only natural sweeteners. You name it, it probably has it. Bite it, crumble it, add it to cereal, oatmeal, yogurt, or sprinkle it on top of your banana pancakes. I promise, it will be there for you in all the right, sweet ways. |
Ingredients: makes about 10-12 bars/servings
1 C old fashioned oats
4 TB raw almond butter
4 TB organic honey
4 Medjool dates, pitted and soaked
7 TB raw sliced almonds
1/4 C whole roasted, unsalted almonds
1/4 C sunflower seeds
1/4 C raw buckwheat groats
1/4 C unsweetened Coconut Flakes
1/4 C walnut halves
1/2 TB raw grated ginger
1 tsp cinnamon
1/2 tsp salt
Directions:
1 C old fashioned oats
4 TB raw almond butter
4 TB organic honey
4 Medjool dates, pitted and soaked

1/4 C whole roasted, unsalted almonds
1/4 C sunflower seeds
1/4 C raw buckwheat groats
1/4 C unsweetened Coconut Flakes
1/4 C walnut halves
1/2 TB raw grated ginger
1 tsp cinnamon
1/2 tsp salt
Directions:
- Cut the medjool dates in half and remove the pits. In a small bowl, toss the dates in water and let soak for about 20-30 minutes. Afterwards, remove and chop them into smaller chunks.
- Meanwhile, in a separate bowl combine the oats, sliced almonds, whole almonds sunflower seeds, buckwheat, coconut flakes, walnuts, cinnamon and salt. Mix Evenly.
- In a separate bowl, combine the honey and almond butter. Using a spoon, mix evenly.
- After soaking the dates, place them in a blender and blend until they are chopped evenly and become stuck together similar to a paste. Add dates to honey/almond butter mixture. Mix evenly.
- Lastly, grade the fresh ginger into the honey mixture. Mix evenly.
- Add the wet mixture to the dry and mix coating evenly using your hands. I added additional protein powder to the mixture but that is optional. It's a great way to add that extra protein! I used 1/2 a scoop of RAW Fit Protein Powder.
- Place wax paper in a 8x5 baking dish. Place the mixture into the dish and flatten using your hands.
- Sprinkle with a dash of salt and place it in the freezer for 1 hour.
- Remove, cut and store in a sealed container in the fridge/freezer until munch ready (:
