If you've been following our kitchen, then you already know how much we adore hummus. It's the perfect healthy snack, can be made in under 5 minutes, and basically tastes good with anything and everything. Cut up some veggies slices or how about dipping your favorite wheat pita chips? SIMPLE & DELICIOUS. This hummus recipe is made with exactly what it looks like---beets. A twist on our traditional hummus recipe, just pop a beet in the oven and roast it until its perfectly tender. Keep cool & snack on!
Ingredients:
2 cans of Organic Chickpeas (avoid canned goods with the preservative Disodium EDta)
1/2 medium roasted Beet
2 TBSP Extra Virgin Olive Oil
1/4 Cup Trader Joes Tahini Sauce
2 fresh garlic cloves, minced
1/2 lemon - freshly squeezed
1 tsp garlic powder (more if you like it super garlicky!)
1/2 tsp paprika
1/2 tsp chili powder
dash salt & pepper to taste

Roasting the Beet:
Hummus:

Directions:
Roasting the Beet:
- Preheat the oven to 400 degrees.
- Place a small to medium size beet on a sheet of foil and wrap it slightly tight and place on a baking sheet.
- The foil should cover the whole beet with only a small opening at the top (not super tight).
- Bake for 40 minutes or until it's tender using a fork.
- Unwrap and let cool. Peel off the skin and store in the fridge until ready to use.
Hummus:
- Using a vitamix (or powerful blender), toss in the chickpeas, olive oil, tahini, lemon juice, and garlic.
- Slice the beet into small 1/2 inch cubes and toss into the vitamix.
- Toss in all your spices.
- Switch to the spread setting and let it do the work!
- Store in the fridge and snack on endlessly. (:
